Chili Lime Sweet Potatoes


Here’s a simple recipe for a delicious and super healthy roasted sweet potato side dish. A few weeks back I bought Mark Bittman’s How to Cook Everything Vegetarian cookbook and ever since have been dying to make his chocolate laced meatless chili. I’ve been working on my own vegetarian chili recipe (hope to post it soon), and thought the chocolate in his recipe sounded quite interesting. I made a few modifications to his recipe (using canned beans instead of dry, cocoa powder instead of chocolate, and a few other minor tweaks) and the result was amazing! I would definitely recommend Bittman’s book to anyone who is trying to eat less meat. It’s packed with hundreds of recipes and lots of vegetarian cooking tips – it even has a recipe for homemade tofu (next on my list).

As an interesting cross between a salad and a traditional potato side dish, this sweet potato dish proved to be the perfect compliment to the chili. The key here is to pour the spicy lime juice mixture over the sweet potatoes while they’re still hot out of the oven. The potatoes soak up the vinaigrette leaving them sweet and tangy. I imagine this dish would also pair nicely with any kind of slow cooked roast or chicken, and might even have a place at my Thanksgiving table this year.

CHILI LIME SWEET POTATOES

2 pounds sweet potatoes
olive oil spray
juice and grated zest of 1 lime
1 teaspoon extra virgin olive oil (or up to 2 tablespoons if calories aren’t a concern)
½ teaspoon coarse kosher salt
½ teaspoon chili powder
2 tablespoons fresh parsley, finely chopped
½ garlic clove, smashed into a paste

Preheat and oven to 400 degrees.

Peel the sweet potatoes and slice ½” thick. Spray a foil lined baking sheet with olive oil. Spread the sweet potato slices onto the baking sheet forming a single layer. Spray the slices with a bit of olive oil and sprinkle with salt. Bake for 1 hour flipping them once after 30 minutes.

Meanwhile, whisk together the remaining ingredients in a small bowl.

When the sweet potatoes are done baking arrange them on a serving platter and pour the vinaigrette over top. Delicious hot or cold. Enjoy!

Mel, Remember when you were a kid in grammar school and they had that checkbox on your report card "Able to Follow Directions" well my box would say “Needs Improvement”. I guess much hasn’t changed. I read your recipe through quick, went to market after work to get my ingredients, went home cut up the sweet potatoes. I then grab the recipe again to see the next steps. I started reading from the top..Peel potatoes… oops..I had already sliced them with the skin on, well that is ok I thought, I like the skin isn’t that where all the nutrients are? Next step…cut potatoes ½ inch thick…I looked over at my slices and they were about a ¼ inch…ok so I’ll leave them in for 20 minutes instead of 30 minutes (at this point I am a little frustrated with myself for not taking the time to read the recipe closer, but I’m into this now so I move on to the dressing. Chili powder…when I was at the market I didn’t pick this up because I could vision this on my spice rack…where is it…at this point my husband ask me from the parlor…”why are you screaming”…I don’t have any Chili Powder! What the heck, why give up now…so I pull out the crush red pepper…hey maybe this will work. (I thought if Mel could see how pathetic this was she’d ban me from her blog.) Amazingly in the end they were pretty good. My husband and son liked them. Of course, I played it cool and didn’t tell them how much I screwed up. I can’t imagine how good they would have been if I made them correctly. I am going to try again real soon. Thanks Mel. Barbara L

hands-down my favorite sweet potato recipe (maybe my family's favorite if they ever get a chance to have any).

Oh my God! Your blog is FABULOUS! I was searching for a chili lime sweet potatoes recipe and I found yours. Scrolled through the recipe, read the comments and thought, "This is good." Then I scrolled back up and saw your blog design and my heart almost stopped. I love everything about it. I've got to run now, but I'll be back for more
