
BTW… if you live in Southern New England and you’ve never been to the Providence Wintertime Farmers’ Market in Pawtucket then prepare for a delight! Carved out of an old mill building, it’s table after table of wonderful artisanal foods from throughout New England. On any given Saturday you can expect to find a variety of local cheeses, breads, jams, salsas, sprouts, eggs, milk, and much more!
ROASTED ROOT VEGETABLE WHEAT BERRY SALAD
WITH PEA GREENS
½ cup wheat berries
olive oil spray
3 beets, chopped into ½” cubes
6 carrots, chopped into ½” thick rounds
1 blub fennel, chopped into ½ cubes
salt and pepper
zest and juice of 1 orange
4 tablespoons white balsamic vinegar (I like Trader Joes brand)
4 big handfuls of pea greens
fresh ricotta cheese
Bring wheat berries and 2 cups of water to a boil. Simmer for approx 1-1/2 hours until the wheat berries are plump and tender and liquid is absorbed. (Can be prepared 1-2 days ahead of time.)
Preheat oven 450 degrees.
Line a sheet pan with aluminum foil and spray with olive oil. Add the beets, carrots and fennel to the tray and spray with a bit more olive oil. Roast for 1 hour, stirring occasionally.
In a large bowl whisk together the orange zest, orange juice, and vinegar. Add the roasted vegetables, cooked wheat berries, pea greens, and toss until well combined. Season with salt and pepper to taste. Serve with the fresh ricotta cheese. Enjoy!
